Peanut Butter Cookies | To Die For

I have a problem with peanut butter. I need it. I need it to live. Seriously. I might move to India but for the lack of peanut butter. I nearly died there for 3 weeks without it. And, no need to tell me about substitutions or fancy cashew butter. That won’t cut it.

I believe the addiction must run in my family. My brother C is exactly the same way. I recall a Christmas where C received a giant vat of Skippy peanut butter from Costco. I still remember the look on his face when he opened the gift. His eyes lit up and his grin was wondrous. The container was unfathomably huge. Those were the days when Costco and box stores were new. We were still in awe of giant portions. Kids today have no idea.

So when baby W came into the world on Monday morning, I knew she would need a sampling of the good stuff ASAP. I whipped up these cookies with a fantastically simple but true old fashioned recipe. I am sure the esssence will make its way into E’s breast milk. It’s only a matter of time until baby W joins the ranks of the peanut butter addicts.

Old Fashioned Peanut Butter Cookies
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup creamy or chunky peanut butter (do not use old-fashioned style or freshly ground)
2 teaspoons vanilla extract
1 cup (packed) golden brown sugar
1 cup sugar
2 large eggs

Preheat oven to 350°F. Line 2 large baking sheets with parchment paper. Mix flour, baking powder and salt in medium bowl. Using electric mixer, beat butter, peanut butter and vanilla in large bowl until well blended. Beat in both sugars. Scrape down sides of bowl. Stir half of dry ingredients into mixture. Add eggs 1 at a time, stirring well after each addition. Mix in remaining dry ingredients.

For each cookie, roll 1 heaping tablespoonful of dough into 1 3/4-inch-diameter ball. Arrange dough balls 2 1/2 inches apart on prepared baking sheets. Using back of fork, flatten dough balls and form crosshatch design on tops. Bake cookies until dry on top and golden brown on bottom, about 14 minutes. Cool cookies on baking sheets 5 minutes. Using metal spatula, transfer cookies to racks and cool completely.

    Funny….I’ve head it said that the food your craved when pregnant was the baby’s fave foods. Perhaps its the same when you breast feed? Either way your cookies look good.

    Sometimes the best cookies are the simplest – love, love, love peanut butter cookies. I’ve made a whole-wheat version with raw sugar from Maida Heatter that was soo good.
